[illegible] all well together till quite light; make [illegible] light paste with equal quantities of butter & flour, alittle sifted Sugar, moisten with warm milk, [illegible] [illegible] patty [illegible] with the paste, fill [these?] 3 parts full with the Mixture & bake in a moderate [oven?] [Rolled?] [Tongue?] While the [Tongue?] is hot, after boiling, [roll] it [round] with the tip [illegible] [illegible] press it [into?] a [illegible] tin; put a few bits of Butter [onthe?] top, & put it in the [oven?] for a few minutes till the Butter is melted; then take it out & let it stand [to get ?]cold, with weights on the top to press it [Salade?] [a] ' Oranges Peel the oranges very clean, cut them in slices [across?] the fruit & arrange them as a [cutlets?] [in?] a circle in the dish.
