English cheese cut into thin slices a bit of butter the size of a walnut, two tablespoonsful of good (illegible) put into a stew pan and keep stirring till it boils & is Quite smooth then scald the white and yolk of an egg stir it quickly, put it into the dish Brown it (illegible) before the file no cheese (illegible)be used that is old with blue mould (illegible) to be sent up with it very hot.
