47 them till they are quite transparent - N.B. - this is beautiful and Excellent Mock Ginger of Carrots - Steep one pound of Ginger 12 days in a Mutchkin and a half of water - Take the largest Carrots you can get boil them till rather tender - take out the Inside and Cut it into lengths like Ginger - to each pound of [here the word "ginger" is written and then crossed out] Carrot take a pound + half of loaf Sugar and boil it to Syrup with the water the ginger has been Steeped in and part of the Ginger slightly bruised and [hid?] in a muslin Bag - with the addition of 6d - worth of whole Ginger the outside scraped off - then Boil up the Carrots with it. Mrs. Cary Lemon Cheese cakes The Juice and grated rind of 2 Lemons 6 Ounces of Butter, 2 of Sugar. the yolks of 6 Eggs - 2 Ounces of almonds beat fine a little Brandy mix altogether - line your pans with paste - bake 15 minutes in a moderate oven - Mrs. Cary
