59 - Lobster dressed with a little Cream and Butter is Excellent the Roe should be beat in a mortar with milk to colour it. Potatoes when young done stewed with milk and a little piece of Butter a few minutes and a very little Sugar is good. Cold potatoes cut in pieces and done this way are good boiled Potatoes cut in slices, & fried, are good. Apples Stewd Whole with Apple Jelly For Apple Jelly the Apples should be Boiled [impard?] with a little alum. The Pulp is then carrfully scraped from the Core. Then take equal weight of Sugar and after Stranning it thro a thin Cloth and making the Sugar into a Syrup Boil but together untill it thickens Then pour it into a Shape - a little Lemon Juice in water
