93 Chase Cakes Take half a pound of pounded and sifted loaf Sugar Put to the Sugar the yolks eight Eggs - beat them up together till they are light and white and then add half a pound of ground and sifted rice - Beat six ounces of fresh Butter to a Cream and add a glass of Brandy to the other ingredients mix all well together and fill the the pans half full bake them in a Slow Oven Miss Barry [illegible] Apple Marmalades (Miss Lyall) Take 4 lbs of soft mellow Apples Cored and sliced thin as for a pie, and 2 TeaCups-full of light white wine or [illegible] - Stir them well over a slow fire till the Apples look clear - perhaps a little more wine may be necessary while Stewing them - then add 3 lbs of either white or brown Sugar and the Rhind of 2 Lemons and 2 Seville Oranges grated and the juice Boil it for half an hour till of a proper consistancy - Sweet oranges with [illegible] of butter can not be had -
