small joints can be cheaper done (5 or 6 lbs) in a Dutch oven called a [V?] oven [14 feet?] by 10 inches much less fire needed 1/6 each Boiling meat is cheaper than roasting it. Boiled beef is neither so wholesome nourishing nor economical as fresh meat. Stewing the best form of cookery. it is impossible to make any good stew or delicate sauce in iron saucepans - they should be done in clean copper ones but nothing must get cold in one! iron stew pans lined with enamel are the best substitutes for copper. Maccaroni should be [5" or 7"?] a lb it is not dearer in London than potatoes and contains more nourishment in a smaller [compass?]. Plain biscuits in a biscuit tin should always be in a Dessert Table. Calves tail soup . 2 will be sufficient for soup for 6 people, order beforehand a day - divide - dip in milk & flour & fry brown, stew till tender in stock with carrot onion and turnip
