To make 25 gallon of soup. 32 lbs of Beef - neck and shin 2 Gall. of Pease 6 lbs of Rice 1/2 Gall. Onions 1 Gall. Turnips 1/2 Gall. Carrots Pepper, salt, and celery seed. First cut off all the meat from the bones - Bail the heater and the bones together - then put in the Peas and bail them till they burst - this prevents burning - heat Rice - then meat and vegetables. 1 lb of Celery will be sufficient for about 6 times the above quantity.
