32 made not much stiffer than butter. June 1st 1847 Curate Pudding Weigh 3 eggs in the shell the same weight of Butter Flour + Sifted Sugar beat the butter to a cream beat the whites + yolks separately add the butter by degrees, then beat all well together. Put in the grated rind + juice of a Lemon add a little Nutmeg butter some small cups + bake three quarters of an hour - Serve with Wine Sauce To preserve Pears - Mrs Diggle 27 Nov 1847 Take the largest Winter Pears (when on the turn) pare them nicely, cut them in two, and leave the stems on. To every pound of pears add the same quantity of white sugar, and to bout 50 put a quart of Water, the juice and peel of 4 Lemons finely shred a small cup of Cloves, ten pennyworth of Cochened pounded, let them stew on a slow fire (constnatly turning them) till a straw will go through them, then put in a
