Bake cake in a moderate oven. Put cake in the oven as soon as well mixed & do not open the oven for at least ten minutes. When well risen hurry the fire a very little. If fire is good, sprinkle on a little coal when you put cake in and as the coal lights the heat will increase just about right degree. Cake baking at a High Altitude. All receipts must be changed at a high altitude - less butter and less sugar. For instance, if a receipt calls for half a cupful of butter, a tablespoonfull will be quite sufficient. Half a cupful of sugar will answer for a cupful. In other words, a sweet cake is little more than ordinary bread dough at a high altitude. If sweetness is desired cake may be baked in layers and put together with soft icing.
