your Butter is cold spread it over them in y/e Pots; you may do some the same way for drying, only omitting the Butter & drying them in y/e oven. To pot Salmon. Season your Salmon with Salt, Pepper, Cloves, & Mace; put it in a Pot & cover it with Butter, bake it with white Bread, & when it is baked put it in another Pot, & cover it w.th clarified Butter. Another - Take a Side of Salmon, scale & wipe it clean, but not wash it; salt it well & let it lay till the Salt is melted & drain'd from it; then cut it in Pieces fit for the Pots; season it w.th beaten Mace, Cloves & pepper, cover it all over
