To Make Curry. Take 2 Fowls & stew them with 3 Onions shred & a little Salt to raise the Scum; then take them out; season them w.th a little Pepper, Salt, & Turmeric, Coriander Seed & a little Ginger sliced & a Clove of Garlic; then take a clean Stew Pan & when hot put an oz. of Butter & fry them, but do not let them brown; when you think they are done put the Liquor in that they were stew'd in, but let it be strain'd; then put in half a Pint of Almond Milk; let it simmer gently over the Fire about 20 Minutes, it Sho.d be season'd pretty high w.th Pepper & Salt, but that you may add as you please - If you think it is not yellow enough put in a little Turmerick Juice; before you send it up you May squeeze in a little Juice of Lemon; garnish w.th Shred Lemon & Barberries; some Rice boil'd dry on another Dish to eat with it.
