well wash'd & without Salt; beat it with y.r Hand to a Cream & take Care it don't oyl; take 2 lb of Sugar pounded & sifted, mix it with y.r Flour & put it in a little at a time to y.r Butter with 1 oz: of Mace pounded very fine, take off the Froth from the Whites of the Eggs with a Whisk; & put that in by turns with the Flour & sometimes a little of the Yolks; let the Person keep beating it till all is in; then put in the Currants a little at a time & 1 lb of Citron cut in Pieces with half a Pint of Sack & as much Brandy; be sure the oven is ready by the
