little Yeast on a Toast into it & let it Stand 3 or 4 Days to work in the Tub; then turn it & in 8 Weeks time put 2 lb of Loaf Sugar into the Barrel & stop it down for 4 Weeks more, & it will be fit to bottle -- And so in Proportion for a greater or less Quantity. To make Saragossa Wine, or English Sack. To every Quart of Water put a Sprig of Rue & to every Gallon a Handfull of Fennel roots; boil them half an Hour; then strain them out & to every Gallon of Liquor put 3 lb of Honey; boil it two Hours & scum it well;
