substitute for Hops to every Bushel of Malt take from 1 1/2 to 1 oz of gentian Root to which 1/4 lb of Hops should be added the Root should be sliced and boiled in water some time to extract the bitter [points?] a few Hops added in the Cask when the liquor is stoped down will impart the full flavors of the Hop the gentian Root may be had for 1 1/2 per oz and is equal to 1 lb of Hops that will cost 6
