Ginger Wine to 12 lb of sugar put 18 qts of Water a 1/4 lb of ginger bruise the Peel of 4 Lemons boil it three quarters of an Hour put it into a Tub when it is luke warm put to it three spoon fuls of yeast then add the juice of the Lemons and 1 lb of Raisins chopped put it altogether into the Barrel let it stand a fortnight stirring every day then add 1 qt of Brandy and 1 oz of Isinglass stop it down in 6 weeks it will be fit to Bottle
