The original reciept for Dr. Oliver's Biscuits. Take two pounds of flour, put one spoonful of yeast in a little warm milk & mix it in a little flour, let it stand to rise for a quarter of an hour, them melt a quarter of a pound of butter in milk enough to make it into a stiff paste, roll them out & bake them in a slow oven. The above quantity will make two doz.n Put them to rise one hour before you bake them - The above Paste makes very good cakes for breakfast four to a pound. Yorkshire cakes. Three pounds of the best flour, three eggs, three ounces of butter, pint & half of new milk, two table spoonsfull of yeast, a little salt, to stand by the fire an hour, a quarter of an hour will bake them in a quick oven, roll them out about the size of a tea sauces, & prick them to prevent their blistering. To make rolls. To a quarter of a peck of the best flour, put two eggs two ounces of butter, a quart of new milk, three table spoonsful of yeast, make them the size of a penny loaf half an hour will bake them in a quick oven, they must stand by the fire an hour, & wash the top with a little milk.
