Salad Oil must be clean, bright, pale yellow- not green Get 2 or 3 small cabbage and lettuce. Wash them in cold water- dry them by shaking in wine basket or put them in a cloth & take the cloth by the four corners and make the lettuce leaves jump inside. Then put them lightly into a salad bowl; next chop with enough parsley to cover a [?] piece & also chop 3 fresh mint leaves & sprinkle this over the lettuce. Next take a tablespoon & place with about half a salt spoonful of salt & quarter of pepper fill the table-spoon with oil. Mix in the pepper & salt
