Common Flummery Steep an oz of Isinglass in a quart of milk, then take a slice of Lemon-peel, a small piece of cinnamon & a teaspoonful of orange flower-water, sweeten it to your taste and boil it near half an hour then strain it thro' a piece of muslin & stir it till it is almost cold, wet your cups with cold water and fill them, If they do not turn out each, dip your cups in hot water, but first loosen them round the edge with a needle. Italian Flummery Over night boil an oz & 1/2 of Isinglass in two quarts of water till it is reduced to half the quantity, the next day take the juice of two civil-oranges & 3 Lemons shred fine some of the peel of each into the juice, sweeten to your taste, mix & stir them all well together and put them into moulds. Before you put in the Lemon, orange & Sugar, dissolve the Isinglass over the fire.
