Minestroni Soup. 4/10/40 25 qts Chili[?] sauce 1 1/2 ibs carrots 1 ib [illegible] beans 1 ib Beef 1 ib Rice 1 1/2 ibs onions 1 ib Mara Fat Peas 1 ib cabbage 1 ib leeks 1 ib macaroni 8 [illegible]Marg Method Peel, wash all veg. Cut in paysanne style. Place in containers with marg and salt cover, allow to stew on till lunch. Add your stock. Bring to the boil. Add your partly[?] cooked peas, and beans macaroni and rice. Simmer for further 30 mins. Correct seasoning and serve.
